The ingredients in Basque cuisine are abundant and varied thanks to the richness and variety of fish in the Cantabrian Sea, and to the abundant pastures on its hills, which are nourished by bountiful rains and make it possible to raise high quality livestock. The mild inland climate supports vegetable farming and a proliferation of abundant livestock. This all contributes to the multiple variants of every traditional Basque dish. Bars and restaurants in the Basque Country offer tapas popularly known as “pintxos”, a tradition that is particularly cherished in this region, where the pintxos take on their own special characteristics to become an art form.
